Record the starting conditions
Write down the date, important ingredient brands, pan size, equipment, and yield. For baking, note room temperature when fermentation is a major factor.
Change one variable at a time
If you reduce sugar while changing the flour and the oven temperature, you will not know which change affected the result. Test one major change first.
Use observable indicators
Record color, texture, height, weight loss, internal temperature, or how the food responds when pressed. Measurable descriptions are more useful than writing only “tasty.”
